Tradition with a twist

Local produce from the Jura, classical bistrot dishes with a twist... the menu designed by Arnaud Coulet is a constant delight to gourmet diners who are passing by.

Terrine of foie gras, frogs’ legs in parsley and garlic sauce, breast of chicken with yellow wine and morels, trout fillet poached in Savagnin and a Paris-Brest pastry ring, both crispy and creamy  … there is no lack of  specialities to make you want to come back again and again.

The Chef juggles inspiration and tradition, and guarantees that you will be privy to gourmets delight each and every time.

Chef, Arnaud Coulet

Arnaud Coulet trained with his uncle at L’Auberge Fleurie in Monnet-la-Ville, passed his Bac Pro and BTS at the Lycée Hôtelier in Poligny, and spent time at Le Bon Accueil in Malbuisson, with Marc Faivre and with Jean-Paul Jeunet in Arbois. However, it was in 1999 at the Château de Germigney that his career really took off.

He also enjoyed two other formative experiences, with Bruno Gato, in Mouchard and then at La Balance in Arbois before taking charge, in 2004, of the kitchens at the Bistrot le Pontarlier.


Awards
The Bistrot le Pontarlier is a member of “Auberges & Bistrots de France”, and is a perfect example of those good restaurants and bistrots which offer traditional yet inventive cuisine showcasing the wealth of fine produce that their local area provides. 

This combination of fine cuisine and a friendly, enjoyable atmosphere has been recognised by the award of “Young Talent 2008” to Arnaud Coulet, who is one of the 22 chefs under the age of 32 recognised today by the Gault Millau Guide.
